Where to Get the Tastiest Meatball Sandwich in Amsterdam

Corona sucks, everywhere and always, and I’m continually amazed by how incredibly inventive the hospitality industry turns out to be. Even though entrepreneurs sometimes don’t understand a thing about all the new measures (because how on earth can’t restaurants stay open?), the day after the press conference, all kinds of cool initiatives are already popping up. Such as: ‘All Balls at BAUT’.

The initiator is BAUT’s ever-inventive chef and owner, Michiel van der Eerde, with whom culinary journalist Hiske Versprille made a very interesting podcast a while ago—highly recommended listening!

Good old meatball

To keep all the balls in the air during yet another hospitality shutdown, Michiel isn’t coming up with (complicated) DIY packages this time, but is going back to basics. Michiel: ‘What would we really love right now? To sit comfortably on the couch at Mom’s, with mashed potatoes and gravy and a meatball. And for lunch? A meatball sandwich with mayo or satay sauce! Because nothing could make us happier right now…’

That’s why BAUT serves a different kind of mashed-potato dish every day, always with a meatball. Michiel, laughing: ‘Because our meatballs are simply the tastiest there are, and there’s no way our cooks are going to be doing nothing over the next few weeks.’

Every meatball gets the love it deserves

Of course, I had to taste them first. And goodness me, it has to be said: what fantastic meatballs! Super juicy, wonderfully flavorful and with such a crispy top and bottom… irresistible! How do they do it? First of all, with the perfect ratio of 40% beef, 40% pork and 20% veal. Then they’re mixed with butter-fried onions and garlic, wholegrain mustard, sherry vinegar, three kinds of sambal and one top-secret ingredient that I—scout’s honour—can’t reveal. Each meatball is then fried in the pan and turned by hand. Perhaps that’s the most important thing: every meatball gets the love it deserves. And we could all use that extra TLC, couldn’t we?
