Secure it with the locking lever. Then use the Sparkling System at the desired pressure to fill the bottle with Coravin Pure Sparkling CO2, so the bubbles in the wine don’t escape. To pour the next glass, carefully remove the stopper and pour the desired amount. When you’re done, put the Sparkling Stopper back on and bring the bottle with stopper back to the desired pressure using the Sparkling System.
