You don’t have to be a chef for a stainless steel frying pan; you can do it too

We were so happy to find someone on a website who honestly admits that she always looks into the kitchens of restaurants and chefs with a little envy when they seem to cook effortlessly in stainless steel pans. How come nothing ever sticks to them? How do they make it look like it’s a non-stick pan??

Because, to be honest, at home it can sometimes be a bit of a struggle with stainless steel pans. They are not seasoned like cast-iron pans, or a steel wok, and therefore don’t have that lovely layer of fat that helps as a natural non-stick coating. So it was a huge relief when Misen, a manufacturer of excellent Japanese kitchenware, posted a video on TikTok showing the trick to prevent food from sticking in a stainless steel pan.
Very precise
It all comes down to the right temperature. You mustn’t put anything in the pan, not even fat, until the exact temperature of the steel has been reached at which frying becomes a breeze. And how do you test that?
Drops of water
With a few drops of water. First, heat the pan over medium heat for two minutes. Then spoon in a few drops of water. ‘If it sizzles a little or nothing happens, wait a little longer,’ they say. If the water splits into several beads, however, the pan is already too hot and you need to turn down the heat and let the pan cool down for a moment.
Super smooth
The perfect moment to use it is when the drop moves around the pan like a slippery little bead. Then you know it’s ready, and you pour in some oil. In the video, an egg then goes into the pan, the pan is tilted back and forth a little, and the egg simply spins around just as the water drop did moments before! Magic! (Especially knowing that you won’t have to scrape the bottom with a wooden spatula while washing up later.)
