Khachapuri is a popular Georgian dish and is served there as a main course or side dish. Khachapuri comes in all shapes and sizes. What it looks and tastes like depends entirely on who makes it and which region it comes from.

In Georgia, they mainly use cheeses from Georgia itself, such as sulguni or bryndza. But this recipe uses cheeses that are also available in the Netherlands, such as mozzarella.
Different types of khachapuri
There are several different types of khachapuri. Such as the boat-shaped and best-known adjaruli khachapuri, topped with a fried egg over the cheese, with the thick crust dipped into the cheese. What’s more, Georgians add a large knob of butter to the warm mass of cheese to make it even more liquid and rich. Imeruli khachapuri resembles a pita generously filled with cheese, while other varieties look more like a cheese pizza. There are even several varieties of this dish that contain no cheese at all, but meat.
