How to make the Caesar Salad Club Sandwich

  • Spread mayo on both sides of the slices of bread. Grill them in a frying pan until golden brown and crispy.
  • Fry the smoked bacon in the same pan until crispy and set aside on a paper towel.
  • Pull the roasted chicken apart into nice, large pieces (check for bones) and set aside. Keep the carcass for, for example, chicken soup.
  • Place two slices of toast next to each other. Divide some tomato, 2 eggs, a slice of cheese, some lettuce, a tablespoon of dressing, 4 slices of fried bacon and a small handful of Parmesan between them.
  • Place a second slice of toast on each and add another slice of cheese, some lettuce, tomato and the chicken. Spoon a tablespoon of dressing over them and sprinkle with some more Parmesan. Finish both sandwiches with a final slice of toast.
  • Press down gently and insert cocktail sticks into the two opposite corners. Cut the sandwiches diagonally with a bread knife, letting the knife do the work. Fantastic with a handful of plain or Patatje Joppie crisps.

How to make the Caesar dressing

  • Grind the garlic, anchovies and tarragon leaves in a mortar into a coarse paste. Mix the paste with the remaining ingredients. If the dressing is too thick, add a little water. Kept tightly covered and refrigerated, the dressing will keep for a week.
