Lassi cools down the hottest days

In India, it can get hot, very hot. And what better way to combat that than with a wonderfully refreshing drink?

Lassi is an almost milkshake-like drink made with yogurt, water and sugar, with roots in India. This may not sound very exciting, but trust us: the acidity of the yogurt combined with the ice-cold temperature at which you serve lassi is a winning combination on a hot day.

You can vary the basic recipe by adding fruit and spices. Banana, strawberry, pineapple, cardamom, mint, rosewater—you name it. Our favorite by far remains the noble mango lassi.

In the Netherlands, temperatures will not quickly reach the heights they do in India, but lassi is also delicious on a mildly sunny day. So get started on this simple recipe right away. If you cannot find good mangoes, lassi can also be made with mango pulp, sold in cans at Indian shops.

Method
Put the mangoes in the blender and blend until a purée forms. Add the yogurt and ice cubes and purée until you have a thick but smooth consistency. Add sugar to taste. Most recipes use about one tablespoon per person, but it depends entirely on how sweet the mangoes are and how sweet you want your lassi.

You can optionally add ground cardamom or rosewater, or garnish the drink with finely chopped mint.
