Lime cheesecake with Oreo brownies

If you see a cheerful guy named Waldo selling brownies and cakes at a (food) festival, don’t hesitate and get in line immediately. We’ve been fans from day one because Waldo makes wonderfully fudgy brownies and delicious cakes.

So the fact that he released the recipe for this lime cheesecake in the book Firestarters of Food, Art & Music is, as far as we’re concerned, a true gift from heaven. Go make this stuff very quickly! You can also get the brownies at his shop on Amsterdam’s Elandsgracht.
How to make lime cheesecake with Oreo brownies
Bring the cream cheese to room temperature and mix it with the sugar. Stir until smooth and lump-free. Weigh the egg (yolk) and whipping cream together in a measuring jug and, while stirring, pour this into the cream cheese mixture. Add lime and/or lemon zest to taste. Finely chop the WALDO-Brownies and press them into the baking tin as the base. Place the base in the freezer for 10 minutes and, in the meantime, preheat the oven to 130°C.
Remove the base from the freezer and pour the filling on top. Place the baking tin in the oven for 40–45 minutes and, if desired, put a small dish of water underneath it. We gently cook the cheesecake; even after baking, this cheesecake remains pale in color. When the cheesecake feels firm, remove it from the oven and refrigerate it for at least 1 night. Add a lovely glass of crisp dessert wine and you have a beautiful finale to your dinner. The lime cheesecake is a real treat!
