Recipe: Croque in the hole (what an invention!)

A toad in the hole (also known as an egg in the basket) is a fried egg cooked in a hole cut out of a slice of bread. Believe me, once you’ve tried this, you’ll want more, more, more!

At home, we call it ‘Egyptian eye’. A breakfast classic for years!
How to make a croque in the hole
Start with the toad in the hole. Use a glass to cut a circle out of a slice of bread. Melt some butter in the frying pan. Place the slice of bread in it. Crack an egg over the hole. Keep the yolk intact and press the bread down briefly so that not too much of the egg runs underneath. Cut off and eat any egg that runs out.
Once the egg is cooked, slide the slice of bread to one side. Melt some more butter in the frying pan and place the second slice of bread in it. Put a slice of cheese on top and cover with the slice of bread with the egg. Let the underside brown over medium-low heat. Your croque is ready when the cheese has melted. Sprinkle with pepper and salt to taste. Want more heat? Serve with sweet chili sauce for chicken.
