Bubble tea: we love it. The combination of gummy balls with creamy, ice-cold tea and milk is always a hit. Would you like to try making this Taiwanese drink yourself? It’s not difficult. These are the three ingredients.

Tapioca pearls

These gummy-like balls are the highlight of your bubble tea. You can simply buy them at an Asian supermarket. Don’t be alarmed when you open the package: the pearls are still hard at that point. That changes as soon as you add boiling water and let them sit for fifteen minutes. If all goes well, they will float to the surface after those fifteen minutes. Then pour them into a bowl and let them sit for another fifteen minutes.

Sugar syrup

The tapioca pearls are naturally flavorless. To give them a sweet touch, make a simple sugar syrup. Some people make one with just granulated sugar and water, while others opt for a mix of brown sugar, honey and water. Leave the pearls to soak in it for half an hour.

Tea

The super-sweet bubble tea you buy in stores is usually made with powders, food coloring and sweetened milk. Fortunately, regular tea works just fine, and the same goes for regular milk. As for the tea: go for a black tea and brew it nice and strong. Letting it steep for fifteen minutes isn’t a bad idea. And the milk: feel free to use a generous splash. The drink should have a beautiful creamy color.
