Never do this with your steak

Did you get a good piece of meat from the butcher, do your best not to make these six mistakes and then tear your perfectly cooked steak to shreds by using the wrong knife? We can’t have that. So: which knife is best for eating steak?

We can be brief about the answer: a smooth-edged knife. In many restaurants, you do get a serrated knife as a steak knife, but anyone who tackles their steak with a serrated knife actually tears the meat apart.
Against the grain
Johannes van Dam, former culinary reviewer for Het Parool, therefore always took his own knife (by the Laguiole brand) with him when he went out to eat, so that he could cut the meat neatly against the grain.
Sounds nice, but what does it mean? Look at how the ‘grooves’ in the meat run: horizontally, then cut vertically. Do they run vertically? Then cut horizontally. There you go: that’s cutting against the grain.
