Absolutely delicious: chicken satay grilled cheese, and so easy to make

People who have known me for a little while know that I’m a huge grilled cheese fan. To be honest, I think it’s an underrated dish. Because it has a bit of a bad reputation. When ordering lunch, people are more likely to choose carpaccio, tuna salad, grilled vegetables… And (almost) no one ever pays attention to that grilled cheese. Although I have to say that many places are pretty uninspired when it comes to making them.

Because that age-old croque monsieur is still perfectly good, of course, but you can do so much more with a grilled cheese. Brie. Chorizo. Goat’s cheese. Gruyere and red wine. EVERYTHING. But I have the incredibly simple recipe for you here that is genuinely the most delicious. Let me introduce you to: the chicken satay grilled cheese.

This grilled cheese sounds brilliant!

Correct; it is. And it’s also super easy, quick and addictively delicious. You can even customize it to your own taste. If you’re in a crazy mood (or hungry, that works too), replace the slices of bread with a par-baked bread roll and turn it into a chicken satay panini under the grill. Totally doable. And if you really have the time, it’s of course also delicious to marinate and fry some pieces of chicken first. Add some spring onion, too. But I don’t have time for that right now; so here’s the quickest recipe.

How to make the chicken satay grilled cheese:

  • Spread the slices of bread with peanut butter (whichever one you like best; I personally like peanut butter with pieces of peanuts in it for extra crunch)
  • Optional: spread some sambal on them too
  • Put a slice of chicken breast and some bean sprouts on both slices
  • Top with a slice of cheese, another slice of chicken breast and some more bean sprouts
  • As a finishing touch, add some more peanut butter and fold it in half
  • Spread some mayonnaise on the outside
  • Grill ittttt!

Well, there you have it: even a child could do it. And it’s DELICIOUS. Enjoy your meal!
