Are these the unhealthiest vegetables you can eat?

Right, you think you’re starting the year off well, with plenty of vegetables… So you’re eating exactly the wrong ones. Ones that actually aren’t all that healthy, after all. You don’t want that, so from now on, you’ll know better.

Because let’s be honest: those resolutions to eat healthier and live a more virtuous life are all well and good, but they’re not always easy to stick to.
A lot of pesticides
So if we’re dutifully eating green beans—are we actually doing it right, or are we making the wrong choices? There are some risks when it comes to healthy vegetables. Some vegetables can contain higher levels of pesticides. According to an article in Women’s Health, strawberries, spinach and kale often contain more pesticides. It is therefore advisable to wash these vegetables thoroughly and, if possible, buy them organic. And another important point: don’t eat green beans raw. They can cause a terrible rash—we’re speaking from experience…
Vegetables such as spinach, beetroot and celery naturally have a high nitrate content. Although nitrate itself is not harmful, under certain circumstances it can be converted into nitrite and subsequently into potentially harmful nitrosamines. So don’t eat huge amounts of them in a single day. But if you stick to normal portions like everyone else, it really won’t do any harm, honestly. Still, it’s good to know, just to be safe.
The healthiest choices
And then there’s this: broccoli and Brussels sprouts can make you feel more bloated. They can be a bit tough for your intestines to process. So if you want to avoid that, skip them for an evening. But otherwise, they’re extremely healthy. According to experts, the healthiest choices are still spinach, broccoli, Brussels sprouts, carrots and kale. They’re all packed with vitamins and other beneficial nutrients that your body can really use. So make those virtuous choices this year and we’ll be feeling super fit by the end of 2025. But from now on, I’ll wash everything under the tap first—and thoroughly, too.
