New trend: fries with unusual toppings. Shrimp on your fries, truffle mayonnaise, cheese sauce or avocado—the trade magazine Snackkoerier predicts that 2020 will be the year of fries with extra-special toppings.

Frites de luxe

Eetwinkel ’t Hoekje in Ouddorp serves fries with prawns. At Smullers, at every station, you can have truffle mayonnaise pumped over your fries. Ter Marsch & Co won the prize for the tastiest fries at Horecava with Sweet Fries of Mine: sweet potato fries with truffle mayo, Parmesan cheese and dried Dutch sausage. Clear trend: even if you’re very fancy, you can still eat a box of patates frites—provided it has the right topping.

Healthy and green

More and more people are eating vegetarian or even vegan. Lucky for them: fries with ketchup are usually completely vegan. But of course, a green snack bar can take that idea further with a hip topping. How about falafel? Vegan kebab?

It can be even tastier: the healthy kapsalon. Vegan restaurants such as Vegan Junkfood Bar have had it on the menu for a while. Sweet potato fries, guacamole, vegan cheese, carrot, jalapeño and even fresh flowers. Most snack bars won’t go that far, but fries with mashed avocado really aren’t such a crazy idea.

We want meat!

Every movement has a countermovement. Vegetarian or even vegan at the snack bar? Bam, fight back: more meat! Just look at Eetwinkel Polly. They make fresh chimichurri, a Brazilian barbecue sauce with garlic, red chili pepper, onion and lime. They stir it into the mayo, add freshly grilled slices of tenderloin, and top it with another spoonful of chimichurri.

Patatje bigos is an invention by Kris Florek of Patat & More in Zoetermeer. It’s an original Polish recipe for stewed meat, including sauerkraut and Polish garlic sausage made by his sister. Hundreds are sold every week there in Zoetermeer.

Spicy

Sauces and toppings are also getting increasingly spicy. We used to be shocked by a dab of samurai sauce at the Belgian fry shop, but these days you see so-called kamikaze fries at more and more snack bars, such as those by Simon Parrett (The Beef Chief). He has his own spice mix with garlic powder, onion powder, cinnamon and sugar. The fries are hidden beneath a generous scoop of cheese sauce, spicy mayo, kimchi and spring onion. Sesame seeds on top—totally culinary!
