BREAKING NEWS: three-Michelin-star restaurant Inter Scaldes gets new head chef

Big news about Inter Scaldes restaurant in Kruiningen. A new head chef will be taking over the kitchen there from September. After no fewer than 22 years (!), current owners Jannis and Claudia Brevet are handing over the reins to Dutch chef Jeroen Achtien. In addition, Inter Scaldes will henceforth be part of the Pillows Hotel Group.

Inter Scaldes is, together with De Librije in Zwolle, the only restaurant in the Netherlands with 3 Michelin stars. It has also held one of the highest positions in the Lekker500 for years. Jannis and Claudia Brevet say they are stepping down at the height of their careers. Incredible, after having spent almost half a century in the kitchen—22 years of that, of course, at Inter Scaldes.

New chef: Jeroen Achtien

Chef Jeroen Achtien is considered one of Europe’s greatest emerging culinary talents—and we can certainly understand why when we look at his CV. He spent eight years working in the kitchen at De Librije*** and has been working at Swiss Restaurant Senz since 2018, where he cooked his way to 2 Michelin stars and 18 points from Gault&Millau. In addition, in 2022 he opened restaurant Birdy’s in Brunnen, Switzerland, together with his business partner Christian Vogel. So this promises great things for Inter Scaldes.

Takeover with a smile and a tear

Jannis and Claudia have enormous confidence in the takeover. Nevertheless, they say it will be accompanied by a smile and a tear. That is hardly surprising, because during all the years the duo has been at the helm, they have built up a huge following of regular guests at Inter Scaldes. Fortunately, they still have some time before they truly say goodbye. They will continue working at the restaurant in Kruiningen until mid-September.

But what will happen to the Michelin stars?

Inter Scaldes currently has no fewer than 3 Michelin stars. Will they be at risk now that a takeover is coming? According to Claudia, most likely not. Jannis will continue working through September and remain involved with the restaurant through December. Assuming Jannis continues cooking at the same level during the Michelin inspection, the 3 stars will remain in-house this year. In the new year, Michelin will undoubtedly visit Inter Scaldes regularly to assess it again. We will have to wait and see what that assessment will be like—although expectations are high. Exciting times!
