Chicken with roasted Jerusalem artichokes

The Really Quite Good British Cookbook features recipes from well-known and lesser-known Brits, including Nigel Slater and Nigella Lawson, as well as Diana Henry – FavorFlav’s Renée’s favorite. This recipe for roasted Jerusalem artichokes and chicken with an anchovy, walnut and parsley relish is hers.

Diana: ‘The anchovy here is not a hidden flavor enhancer, but an important and recognizable part of the dish. I am completely addicted to combinations of salty, sweet and savory. Cooks tend to pair anchovies with lamb, but I also find the combination with chicken delicious.’
How to make chicken with roasted Jerusalem artichokes
Preheat the oven to 200 °C. Scrub the Jerusalem artichokes well. You do not need to peel them (the skin is beautiful and has a deliciously nutty flavor). Cut them in half lengthwise and place them in a steamer. Steam for about 10 minutes and pat dry.
Heat half of the oil in a roasting pan on the stovetop. Put the Jerusalem artichoke pieces in it and shake the roasting pan until they are coated with oil. Brush the chicken with the remaining oil and place the pieces in the roasting pan as well, between the Jerusalem artichoke pieces. Season generously with salt and pepper and squeeze the lemon over them. Roast in the oven for 35–40 minutes, shaking occasionally. The vegetables should be tender and caramelized in places; the chicken should be golden brown and cooked through.
Meanwhile, prepare the relish. Pound the garlic and salt flakes with a mortar and pestle until they form a paste. Add the walnuts and anchovies and pound everything into an even mixture that still contains some pieces. Stir in the oil, vinegar, some pepper and the parsley. Serve the relish separately, so everyone can decide how much they want, or spoon it over the chicken and Jerusalem artichokes before serving.
