Chocolate lovers take note: this is where you can enjoy a special chocolate menu

The Chocolate Festival Amsterdam, held annually at the Beurs van Berlage, is coming up again. And deliciously so; Hilton Amsterdam (a partner of the festival for twelve years already) is organizing a number of culinary events focusing on the versatility of cacao. Including a special menu by a Venezuelan star chef that is guaranteed to make any chocolate lover go wild.

Until February 15, Hilton Amsterdam is serving exclusive cacao-inspired dishes in both the Half Moon Lounge and Roberto’s Restaurant, created by Venezuelan star chef Enrique Limardo. Limardo is co-owner and executive chef of several top restaurants in Washington, D.C., including Seven Reasons, which was named one of the most talked-about restaurants of the century by Esquire, and Michelin-starred Imperfecto.

Cacao culture

Limardo combines traditional Latin American flavors with modern techniques, highlighting the cultural and culinary significance of cacao. To him, cacao symbolizes his Venezuelan roots, and he uses it to introduce others to his culture. The dishes Limardo created for Hilton Amsterdam showcase his innovative approach.

At Roberto’s Restaurant, for example, a rich risotto is served with pecorino, pepper and caramelized cacao nibs, or sautéed foie gras with guava and white chocolate compote. The Half Moon Lounge menu includes the Chocoa Smash Burger, with Oaxacan pineapple ‘mole’ with cacao, a fried egg and Old Amsterdam cheese.

Exclusive events

Alongside culinary highlights, you can take part in exclusive events, such as an intimate dinner with Limardo on February 4. During the evening, the chef will share his inspiration and vision for the role of cacao in modern gastronomy. For Valentine’s Day, Roberto’s Restaurant is offering a special cacao menu in a warm Italian setting, complete with live music and a romantic ambiance. And during the festival, the Half Moon Lounge will serve a tropical cacao cocktail with rum, cacao and lime juice, and coconut sugar syrup, as a tribute to the versatility of cacao.
