This is the tastiest loaded fries and here’s where to get them
For the second time in the history of the Dutch Loaded Fries Championship, Ter Marsch & Co can proudly call themselves the winners. Andy Hoogvliets, chef at Rotterdam’s burger paradise, managed to convince the jury with his ‘Bali Spice Fries’: a delicious combination of Indonesian flavors that left the competition far behind.
What makes the ‘Bali Spice Fries’ so special? Andy combined crispy fries with babi ketjap and Ikan Bali, an Indonesian sweet-and-spicy mackerel. He also turned them into a unique Ikan Bali ketchup and mayonnaise. As a finishing touch, he added puffed rice and a fresh sweet-and-sour pickle of cucumber and green beans. According to the jury, it was a “fantastic harmony of flavors, without excess”.
“At Ter Marsch, we mainly make burgers, so loaded fries aren’t really our specialty,” Andy explains. “But we really took the time to create something special, and that paid off. The versatility of Indonesian cuisine continues to inspire us.” The hard work was doubly rewarded, as this is already the second time Ter Marsch & Co have taken home the gold in a national competition; they also won in 2020 with their ‘Sweet Fries of Mine’.
A podium full of flavor
Not only the winner, but also the runners-up in second and third place were impressive. Femke Versluijs of Frietboutique Laren made her debut and finished in second place with her ‘Salty, Sweet, Sour’. These loaded fries featured mussels, curry mayo, XO sauce and a crumble of chorizo and dried ham. According to the jury, it was a “delicious mix of salty, spicy and fresh”.
Joyce Norder of Snacksalon De Schelp in Roelofarendsveen took bronze with her colorful ‘Fiësta Mexicana’. Mexican beef stew, avocado-lime cream, tomato salsa and fresh lime made for a party in a bowl. “The stew was mildly spicy and wonderfully balanced with the fresh flavors,” the jury said.
