Enjoy a Delicious Cheese Fondue at Kaasbar Amsterdam This Autumn and Winter

Someone put it rather aptly: ‘What, no free trial period or anything, just bam, autumn straight away?’ Well, that’s exactly how I feel too, since the winter socks at home have by now been dug out from between the mothballs. One advantage: it’s suddenly perfectly appropriate to stand behind the stove again and make hearty soups and stews. And to have cheese fondue, YAY!

Because make no mistake: we are absolutely crazy about cheese. Hot, melted, stringy cheese? Even better. So when we discovered that Kaasbar Amsterdam has a whole range of new cheese fondues on the menu, we headed there at a gallop.

Golden trio
There are no fewer than three varieties of cheese fondue on the menu, each with matching wines. In collaboration with De Kaaskamer van Amsterdam, three ideal combinations of different cheeses have been created, resulting in a delicious selection of Dutch Cheese Fondue, Truffle Cheese Fondue and Swiss Cheese Fondue. That’s going to be a tough choice, isn’t it?! (In that case, you’ll just have to come back more often.)
Cheese baby
The pots serve two people and we tried all three, so we did indeed leave feeling absolutely stuffed. But what a great foundation you’ve laid, too—you could easily make it through an entire evening on that! And besides, there’s always room for cheese, so if you simply want to go home after the fondue, curl up on the sofa with a cup of tea and lovingly stroke your cheese belly while daydreaming, that’s perfectly fine too.
Truffle love
You can keep dreaming about dipping those beautiful purple cauliflower florets into the truffle fondue, and about how earthy, fragrant and autumnal it tasted. So delicious! There are far too many cheap truffle-flavoured products, but this fondue is TOP. Add a glass of well-paired Pinot Noir, and autumn suddenly wraps itself around you like a soft blanket.

Or will you go for the Swiss version? Four delicious Swiss cheeses, including Gruyère and Appenzeller, in a combination that produces such a distinctive, typically slightly ‘funky’ aroma and layered flavours. You could also call it ‘stinky in a good way’, and all cheese lovers are probably starting to drool now (me included), because this is the boldest of the bunch.
Glory to the Netherlands
And then there’s the Dutch fondue, which is also absolutely wonderful. Made with, among others, Tynjetaler and Twentse Bunkerkaas, this fondue has a flavour and aroma best described as ‘coming home’. Imagine the best of what real Dutch cheeses have to offer, with their rich, sharp or rather mild flavours in which there’s still plenty of umami to discover, served warm and melted, bubbling away in a little pot right in front of you—comfort food at its finest.
Deliciously local
One of Kaasbar’s charming characteristics is that its regular cheese menu features only Dutch cheeses, many of them made by small producers with whom the bar has built a personal relationship. Be sure to sit at the bar at least once, too, where all those beautiful and delicious cheeses pass by under little glass domes, each with a handy number so you can easily find them on the menu.

The menu is arranged from mild to strong and from white to blue cheeses, so you can create the perfect progression. You can simply pick whatever you feel like from the small conveyor belt, then easily find the detailed description and local origin on the menu. There are cosy tables if you want to stay a little longer, and we also saw plenty of people come in, take a seat at the bar, order a glass of wine and share a few tasty cheeses. They’re planning to start serving cheesy pasta dishes soon as well, so keep an eye on their socials!
Fondue your way through autumn
Alongside the OG Dutch cheese menu, this highly affordable fondue collaboration with De Kaaskamer van Amsterdam is therefore an exceptionally happy development. It’s a great opportunity for Kaasbar to showcase some top cheeses from abroad as well, and one that will make every cheese and fondue lover very happy. So make the most of it during these colder months!
