We all have them: favorite flavors, ingredients and kitchen tools. FavorFlavs we always find ourselves reaching for. These are ours.

Croquette
There really are days when we don’t think about croquettes. Although not very often. Usually, we have this nagging feeling in the back of our minds, a kind of flavor homesickness. A longing for comfort and celebration in a single bite.
We often push that feeling somewhere far behind our healthy intentions. After all, we can’t have one every day… Or can we?
And when we’re standing in front of the display case, ready to make our choice, we spend a while wavering between the different options. Veal, please. Or no, shrimp. Or maybe beef? Or no, veal after all. Yes, veal.
A croquette is happiness wrapped in breadcrumbs.
But the details matter. The breadcrumb crust must be neither too thin nor too thick. And the salpicon must not be over-seasoned or so liquid that the croquette threatens to burst before the first bite. It should also clearly contain recognizable shredded meat or pieces of shrimp. And the frying oil must be spotlessly clean and at the right temperature.
Then comes the first crack, the steam rising from it, knowing you’d better wait a little longer, but not wanting to…
