How to make the ‘nduja tapenade

  1. Finely chop the shallot and heat four tablespoons of oil in a pan. Sauté the shallot over medium heat until translucent.
  2. Then add the ‘nduja and pine nuts and fry for 2 to 3 minutes over low heat.
  3. Finely chop the parsley and basil and stir them in. Then remove the pan from the heat.

Build the feast on your plate

  1. Mix the rocket with the lemon oil and season with some pepper and salt. Then divide the salad over four plates
  2. Drain the burrata and place one ball on each plate of rocket. 
  3. Spoon the warm ‘nduja tapenade over the burrata, grate some lemon zest over it for extra freshness and garnish with some extra basil and cress.
