At the beginning of 2020, winemaker Lorenzo Zonin of Podere San Cristoforo winery in Tuscany filled 600 handmade, 75cl terracotta amphorae (a vessel with two handles that tapers to a point at the bottom) with the red wine Petit Verdot as an experiment, then sank them off the Tuscan coast. The wines aged on the seabed for nine months.

Aging wine on the seabed—who comes up with this?

Red wines made from the Petit Verdot grape are very intense and spicy in flavor. Because of their high tannin content, they can often be stored for a long time. “When they came out of the water, the amphorae were beautifully covered with small algae and shells that almost formed a damask pattern,” says Lorenzo.

Special! Wine aged on the seabed

Mineral character and earthy notes

In the depths of the sea, it is very dark, there is little oxygen and no vibration—rather, very slow movement—all of which are perfect conditions for aging wine. Lorenzo believes that wines in amphorae and on the seabed mature faster, and that this method of aging gives the wines a mineral character and earthy notes.

Spicy yet soft character

Wine magazine Decanter Premium rated the wine—called Podere San Cristoforo, S’Amfora Petit Verdot, Toscana 2019—with 91/100 Parker points. And that is a very high score! What kind of flavor can you expect? “Aromas of blackberries with hints of chocolate and spices, followed on the palate by a spicy yet soft character of black and red fruit and a touch of charcuterie. The wine is fairly concentrated and rich, but also has plenty of freshness,” say the experts. Could that last quality be due to the special aging on the seabed? Surely!

The wine costs €199 and is available from wine platform VINVIN, where you’ll find a very special collection of wines.
