Your own cold cuts at butcher-shop level
Making good charcuterie requires quite a bit of knowledge and technique. But don’t worry, because it is possible for everyone to make their own beautiful cold cuts—and what could be more delicious than popping a slice of your homemade pancetta or bacon into your mouth? Meneer provides extensive instructions and explains techniques live. His analyses of mistakes are useful too. Because, as Meneer says: “Many things aren’t difficult, but you do need to know why you’re doing something. You can’t just go by feel or wing it, as many people do when cooking. That doesn’t work here. Meat is perishable, after all, and you don’t want to die from your own sausage.” To reassure you: the danger is not at all great as long as you understand a little about what you’re doing.
Pancetta, or pork belly, is especially easy to make. Meneer: “It’s deliciously fatty, so you can never dry it too much and it stays wonderfully juicy. A really tasty introductory piece of bacon.” But after taking this course, you’ll be able to do more than that. Calling yourself a fully qualified butcher would be an exaggeration, but making your own cold cuts at butcher-shop level is definitely within reach.
