Heavenly delicious: churro cake with dulce de leche

Moist sweet cake with a buttery exterior, cinnamon sugar and… dulce de leche on dulce de leche on dulce de leche; this churro cake is so delicious that you’ll want to get started right away!

Yes, meus amigos, this Brazilian churro cake is the life of every party and a spectacular finale to any dinner—and easier to make than you might think. All you have to bake is the light cinnamon cake and then coat it with a layer of cinnamon sugar. Then generously spread the cakes with dulce de leche. So go on: bake, spread and stack, and then dig in!
How to make the churro cake
- Preheat the oven to 180 degrees.
- Grease three 20 cm springform pans with butter and line them with baking paper.
- In a bowl, mix the flour with the cinnamon, baking powder and salt.
- In another bowl, use a hand mixer to beat the butter and sugar until light and fluffy. This takes about 2 minutes.
Then add the eggs one at a time and mix until the eggs have been fully incorporated into the butter and sugar. - Now add the vanilla extract and milk and mix at low speed. Then gradually add the flour mixture and mix until you have a smooth batter. Divide the batter between the three springform pans and bake the cakes for approximately 30/35 minutes, until done.
- Leave the cakes to cool.
- Meanwhile, you can prepare the cinnamon sugar coating for the outside of the cake. To do this, mix 2 tablespoons of granulated sugar with half a tablespoon of cinnamon in a small bowl. Sprinkle the cinnamon sugar onto a plate.
- When the cakes have cooled completely, use a brush and a little water to slightly moisten the outside of each cake. Not too much—just enough for the sugar to stick.
- Hold the cake between both hands and roll it through the sugar. Once you have coated the sides, place the cake back on the plate, then moisten the top with the brush and sprinkle sugar over it.
- Repeat this with the other 2 cakes.
- Now it’s time to spread. Place one cake on a cake stand and spread a thick layer of dulce de leche over it. Repeat with the other two cakes. Also cover the top with a thick layer of dulce de leche, and the churro cake is ready!
