Recipe: apple pie with speculoos

“My mother’s apple pie is the best,” says everyone. That’s surely true, but does that apple pie also contain Speculoos? No? What a shame! Because speculoos and apple pie are a perfect match.

Mmmm… nothing is as delicious as the smell of freshly baked apple pie throughout the house. This recipe for apple pie with Lotus Biscoff speculoos cookies is incredibly simple and easy to incorporate without changing your (grand)mother’s apple pie recipe. The crumbled cookies provide extra crunch and a speculaas flavour; delicious with apple!

How to make apple pie with speculoos

  • Preheat the oven to 170°C.
  • Knead the flour, 80 g sugar, butter, 1 tsp cinnamon and 1.5 eggs into a smooth dough.
  • Roll out three-quarters of the dough and use it to line a greased pie tin.
  • Peel the apples and cut them into slices. Sprinkle with 3 tsp cinnamon, 50 g sugar and the crumbled speculoos (adjust the amount to taste).
  • Fill the pie tin with the apples.
  • Roll out the remaining dough, cut it into strips and cover the apples in a lattice pattern.
  • Beat the remaining egg and brush it over the dough.
  • Bake the pie in the oven for 60 to 65 minutes.
