How to make Jonnie Boer of De Librije***’s avocado

Avocado boring? Not with this dish by star chef Jonnie Boer. He doesn’t smash the universally beloved avocado, but roasts it and gives it a dressing with a subtle kick. This special dish is not only easy to make, but also a feast for the eyes and a party on your plate. Perfect as a starter or for impressing your guests at a dinner party.

Making Jonnie’s avocado

This avocado dish is made with Curry Madras, a blend from southern India. This mild, fruity blend is characterized by ingredients such as turmeric and fenugreek seeds.

Avocado

  • Cut the avocados in half lengthwise. Remove the pits.
  • Sprinkle a plate with salt and place the avocados on it, rounded side up. Sprinkle the avocados with salt and let them rest for an hour. Then remove the avocados.
  • Fry the avocados in a hot pan with 4 tablespoons of oil over high heat, until golden brown on both sides. Deglaze with a splash of ponzu.
  • Remove the avocados from the pan and let them cool on a clean plate.

Salad

  • Finely slice the romaine lettuce into thin strips. Cut the jalapeño and ginger into small cubes and mix these three ingredients.
  • In a bowl, mix 2 tablespoons of mayonnaise with 2 tablespoons of Euroma Curry Madras and combine with the salad.

Dressing

  • Heat 2 tablespoons of sunflower oil over medium-high heat. Fry 2 tablespoons of Euroma Curry Madras in it for 2 minutes. Remove the pan from the heat.
  • Take a fine-mesh sieve and place cheesecloth (or a clean tea towel) in it. Strain the oil through it to make Curry Madras oil.
  • Mix the remaining ponzu (100ml) with 100ml of Curry Madras oil and the sushi vinegar.

To serve

  • Put 2 tablespoons of dressing in the center of a plate. Place the roasted avocado on top, rounded side down.
  • Place approximately 1 tablespoon of salad mix in the hollow side of the avocado.
  • Grate some macadamia over the whole dish and dust with Euroma Curry Madras.
