Hummus: the perfect base for your dessert

Hummus is delicious spread on a piece of bread or used to dip vegetables in, but you can do much more with those chickpeas. For example, make chocolate hummus or mix it into your brownies. Huh?

The combination of chickpeas and chocolate may be a little difficult to imagine, but the chickpea base works very well with sweet flavors. It’s also very easy to make yourself. Eat it with bread, spread it on your crêpes or incorporate it into a cake.

Method

For the hummus, finely blend 200 g precooked chickpeas (make sure they are dry), 40 g cocoa powder, 4 pitted dates, 2 tbsp nut butter (such as peanut butter or almond butter), 1 tsp vanilla extract and 120 g maple syrup in a food processor. Gradually add 60 ml water until the hummus has a texture you like. Top the hummus to taste, for example with some sea salt, chili flakes and cinnamon (for a Mexican version) or coffee powder (for a mocha version).

Hummus on everything

So how do you serve the hummus? Spread the chocolate hummus between two chocolate chip cookies (or your other favorite cookies), and you have a cookie sandwich. The hummus is also delicious as a spread on banana bread or crêpes, or as a dip with, for example, crackers and apple.

Brownies

Want more? Mix your hummus into brownies. Combine the chocolate hummus with 3 tbsp sunflower oil, 4 eggs, 135 g brown sugar, 1 tbsp vanilla extract, 130 g flour, 1 tsp baking powder, 100 g chopped chocolate and a pinch of salt, and pour into a baking dish. Bake for 20 minutes in a preheated oven at 180 °C

Chocolate mousse

You can also make chocolate mousse with the liquid from the can of chickpeas. Whip it until peaks form, as with egg whites, and gradually add 100 g granulated sugar. Melt 150 g dark chocolate in the microwave and fold it into the mousse.
