Incredibly delicious recipe: deep-fried guacamole (with tortilla chips)

The ultimate party snack is of course nachos with guacamole. But this recipe takes the party snack to a higher level: deep-fried guacamole with a tortilla-chip crust. Difficult? No, anyone who knows how to turn on a deep fryer can make this. Add some chili dip and it’s heavenly!
How to make deep-fried guacamole:
- Grind the tortilla chips until they resemble coarse breadcrumbs.
- Prepare a baking sheet lined with parchment paper. The baking sheet must fit in the freezer.
- Cut the lime in half. Juice one half and cut attractive pieces from the other half.
- Mash the avocado, lime juice, cilantro, onion, pepper and salt together.
- Shape the mixture into small balls (using an ice cream scoop, for example) and place them on the baking sheet. Put the baking sheet in the freezer and let the balls firm up for 20 minutes.
- Beat the two eggs with a little water. Pour them into a deep plate.
- Put the tortilla crumbs in another deep plate.
- Roll a ball of guacamole through the chips. Then dip it into the plate with the egg until it is coated on all sides, and roll it through the chips once more. This gives each ball of guacamole two layers of chips.
- Heat the deep fryer to 170 degrees. Fry the guacamole balls until golden brown and cooked through, for 2 to 4 minutes.
- Let them drain briefly on a plate lined with paper towel. Sprinkle with salt and pepper. Serve with a lime wedge.
