It’s no secret that we absolutely love frikandellen. The average Dutch person eats around 35 a year, and 600 million frikandellen are sold annually in supermarkets and cafeterias. 600 million! But voilà: now the frikandel is even on the menu of a high-end restaurant!

An ode to the golden-brown happiness stick

Because top chefs love that golden-brown happiness stick too, including one of my favorite chefs, Schilo van Coevorden (executive chef at the Conservatorium Hotel): “As a huge frikandel fan, I’ve been using a great deal of creativity for years to bring my favorite snack the attention it deserves. To this day, frikandellen still have an undeserved reputation. The culinary frikandel, made with honest ingredients, is going to change that.”

A culinary frikandel

Does that exist? Yes! Le Frique was founded in 2019 by former banker Frank Tjepkema and former IT consultant Pieter Stevense, based on the idea that there should be a high-quality alternative to the existing frikandel. Why? Well, simply because there wasn’t one yet, but above all because the most popular snack deserves a quality, culinary cousin.

Chef Schilo has now added Le Frique Unique, a lightly spiced frikandel with fennel seeds, to the menu. The chic snack is served with lobster mayonnaise and spring onion. I can’t wait to try it!
