New and delicious: broccoli with a thin stem

Worldwide, around 30 percent of all harvested fruit and vegetables ends up in the bin. A shockingly high percentage that needs to be drastically reduced. One of the solutions? Broccoli with thin stems and cauliflowers that stay white.

Are you still throwing away the broccoli stalk?! What a waste, because there’s still so much you can do with it and it also contains lots of vitamins! Nevertheless, many consumers want nothing to do with the thick stalk of the green vegetable (shame!). Just like discoloured cauliflower, which people assume is no longer good.

New vegetables

To combat food waste while also accommodating the (unwitting) consumer, many innovations have been introduced and new varieties cultivated in recent years. Including broccoli with thin stems, of which you really no longer need to throw away the bottom part. It will soon be available in stores. Just like the mini cauliflower developed for small households and cauliflower that stays white for longer.

Save the broccoli stalk!

Nicole van Gemert, director of Foodwatch, is doubtful that modifying food is the right solution to combat waste. ‘It is good that people from all sides are thinking about solutions to combat food waste, but you can also solve it in other ways. For example, you can perfectly well eat the stalk of a broccoli.’

And of course we completely agree. Saving = eating!
