New TV programme De Chalet goes in search of culinary treasures in the Netherlands
Looking for cooking inspiration for the festive season? Then be sure to check out the new episodes of the cooking programme De Chalet on the culinary TV channel njam! In this new series, top chefs Roger van Damme, Dominique Persoone and Peppe Giacomazza go in search of culinary discoveries in the Netherlands.
Local producers
In the programme De Chalet: Hollandse maatjes, the chefs visit special local producers and suppliers in the region around the coastal town of Noordwijk, where they have their chalet this year. Among other places, they visit the De Zandhaas grain mill in Santport-Noord, a popular destination in North Holland for top chefs. The mill grinds various types of grain—mostly organic—such as wheat, rye, spelt, oats, buckwheat, kamut, and yellow and black millet.
The njam! chefs also visit top butcher Johan van Uden (butcher shop Chateaubriand, Heemstede), one of the eight officially certified master butchers in the Netherlands, to make traditional fresh sausages with him. Also on the programme: cheesemaker Johan (De Kaagse Boer, Kaag), one of the last farmers in the Netherlands still making traditional Leiden cheese. And Erik and Michiel from Oesterzwammerij (Bloemendaal), pioneers in growing oyster mushrooms on coffee grounds.
A winning recipe for the festive season
Every episode features plenty of cooking. Roger bakes spritz cookies with local flour. Dominique and Peppe prepare, among other things, ‘herring ceviche with a Negroni’ and ‘abbacchio alla romana’. Italian chef Peppe makes crispy pizzas for breakfast and surprises his colleagues with homemade sausage and whiting kibbeling. The men make things extra festive with a Christmas stollen for breakfast, the craziest carpaccio ever, and turkey roulade with truffle.

De Chalet: Hollandse maatjes can be watched on njam! from 28 November. Every Sunday at 11:00 a.m., 4:00 p.m. and 11:00 p.m. Njam! is broadcast on channel 39 (via KPN’s basic package).
