Ostrich on the barbecue – but seriously

Is your barbecue becoming increasingly culinary too? No ready-made bouncy burgers on the grill, but a homemade thick hamburger made with beautiful beef that you season yourself. No barbecue sausages from the supermarket, but homemade gourmet sausages. And ostrich. No, not those steaks…

These two Russian men are also rather fond of messing around with glowing coals and pieces of meat, but they effortlessly outdo our tomahawk and pork neck. They don’t put ostrich steaks on their grill grate, but one of them simply turns up dragging an entire ostrich along. So you’d better start preparing in good time, because if you only take that beast out of the plastic when your guests are already sitting in the garden sipping sangria, it’ll be a night’s work. The ostrich is completely cut into pieces and put on skewers, into the marinade and then over the coals. What a spectacle!
