Ottolenghi recipe: Za’atar salmon with tahini

Yotam: ‘If you have never combined salmon with tahini before, you are in for a real treat. In this version, tahini is mixed with spicy za’atar and sour sumac, our ubiquitous and much-loved staple ingredients in the kitchen. We strongly recommend choosing the creamy, nutty tahini that comes from countries in the Levant. Eat the dish as soon as possible after preparing it, because heated tahini does not stay tasty for very long and cannot be reheated well either.’

How to make the Za’atar salmon with tahini

  • Preheat the oven to 220 °C.
  • Pat the salmon dry and season it with salt and pepper. In a small bowl, stir the za’atar and sumac together and sprinkle the mixture over the entire top of the salmon to create a crust.
  • Place a large ovenproof sauté pan over medium-high to high heat and add 1 tablespoon of oil. Once the oil is hot, add the spinach with a pinch of salt and pepper and cook for 2–3 minutes until just wilted.
  • Place the salmon on top, skin-side down, and drizzle the top of the fish with 2 tablespoons of oil. Place it in the oven for 5 minutes.
  • Meanwhile, whisk the tahini with the garlic, 2½ tablespoons of lemon juice, a generous pinch of salt and 100 ml of water in a small mixing bowl until the sauce is smooth and fairly runny.
  • Remove the pan from the oven once the sauce is ready and pour the tahini sauce around the salmon (but not over the fish). Return the pan to the oven for another 5 minutes, until the fish is fully cooked and the tahini sauce is bubbling. Spoon the remaining lemon juice and oil over it and sprinkle with the coriander and extra sumac.
