Recipe: Aperol Spritz Cookies

Aperol Spritz only for drinking? Not at all. You can also bake the most deliciously moist cakes or pies with the bright orange drink (such as Aperol cheesecake). These cookies are another thing you can bake with it. Dipped in Aperol Spritz glaze!

You can mix the dough for these cookies together in under 3 minutes. By adding plenty of grated orange zest and dipping the cookies in a super-simple boozy orange glaze, this twist on the Italian cocktail is a real hit.
How to make Aperol Spritz cookies
- Preheat the oven to 180 degrees.
- Mix the granulated sugar and orange zest in a bowl. Add the butter, vanilla extract, orange extract and salt and mix until you have a light, fluffy batter. Then add the egg and mix until everything is combined. Sift the flour into the batter and mix with the mixer until combined. Then briefly knead it by hand into a ball.
- Roll out the dough on a piece of baking paper to approximately 1 centimetre thick. Then cut out the cookies with a star-shaped cookie cutter and place them on another piece of baking paper. Bake the cookies in the oven for 8 to 10 minutes, until the top is dry. Let the cookies cool.
- For the glaze, mix the icing sugar with the Aperol in a small bowl. Once the cookies have cooled, dip the tops in the glaze. Then let the glaze set for approximately 15 minutes. If you like, you can also sprinkle some sprinkles over the cookies immediately after dipping them.
