Recipe: apple pie parcels from the barbecue

A whole apple pie from the barbecue isn’t going to work. But you can put these apple pie parcels on the grill at the end of the BBQ party. Setting sun, a glass of Licor43 and then a warm apple pie parcel like this, optionally with a scoop of vanilla ice cream… there won’t be much to complain about.

How to make apple pie parcels from the barbecue
- First make the dough: mix the softened butter with the brown sugar. Sift the flour over the beaten butter, then add the salt and 1 egg. Knead it into a smooth dough. Wrap the ball of dough in foil and place it in the fridge for fifteen minutes.
- Roll out the dough and cut it into strips. The strips of dough should be about 1.5 cm wide.
- Peel the apples, remove the cores and cut them into small cubes. Mix the apples with cinnamon, lemon juice and brown sugar.
- Tear off four large pieces of aluminum foil. Divide the apple mixture over the four pieces of foil.
- Make a nice lattice pattern with the strips of dough over each mound of apple mixture.
- Fold the parcels closed and place them on the barbecue. Let them bake for at least 15 minutes, until the apples are tender and the dough is cooked and crisp. Serve with a scoop of vanilla ice cream, some nuts and caramel sauce.
