Recipe: Bolognese grilled cheese sandwich

tosti bolognese

Got some sauce left over from the ultimate pasta bolognese from yesterday? You can freeze it, but you can also make a grilled cheese sandwich with it. Yes, you read that right: a bolognese grilled cheese sandwich!

From jalapeño’s to sauerkraut, from pastrami to bacon: we welcome many unusual suspects onto our grilled cheese sandwiches with open arms. And that includes bolognese sauce, because tomato sauce with meat and extra slices of mozzarella (or another cheese) on toasted ciabatta make this the perfect lunch. This grilled cheese sandwich also comes very close to FavorFlav’s Wieke’s beloved spicy grilled cheese sandwich… although this one is a little less spicy, but even more delicious thanks to the homemade sauce.

How to make the bolognese grilled cheese sandwich

What do you need? A piece of ciabatta or two slices of bread, slices of mozzarella (or another cheese that melts well) and your leftover bolognese sauce. Spread the sauce over one slice of bread, place the mozzarella slices on top, add the other slice of bread and put the sandwich under the (sandwich) grill for a few minutes until the cheese has melted. Your work-from-home-quarantine lunch can’t get any easier or more delicious!
