Recipe: cookie dough ice cream sandwiches

Now that the sun is showing its best side again, the craving for ice cream comes right back too. Do you feel the same? Then I have a recipe for you that you’ll be very happy with.

I still remember exactly when I ate my first ice cream sandwich. The summer holiday of 1998, on Terschelling. Man, was that good. A little strange at first, because, well… biting into ice cream isn’t something you normally do, but then: cold, soft, creamy, sweet, slightly salty cookie. Oh, so good.
How do you make it even more delicious? Well, with chocolate chip cookie dough cookie, of course. Vanilla ice cream in between. Mmmm.
Here’s how to make the cookie dough ice cream sandwiches:
Note: this recipe serves 12!
- Line a large baking sheet with parchment paper, letting it hang over the sides a little.
- In a large bowl, stir together the melted butter, both sugars, milk and vanilla. Stir in the flour and salt, then fold in the chocolate chips.
- Press the cookie dough flat onto the baking sheet and try to make it as even as possible. Place a second piece of parchment paper on top and put it in the freezer until firm, about 1 hour.
- Remove the cookie dough from the baking sheet and cut it in half.
- Scoop balls of vanilla ice cream onto one half, place the other half of the cookie dough on top and cut it into sandwiches. Dig in!
