A cocktail as a dressing for your salad isn’t new. Last year, for example, we brightened up our summery salads with an Italian Spritz dressing. Do you love olives just like I do? Then you’ll absolutely adore this dressing, because fellow food lover Emily Ziemski is generous with the olive brine in this dressing.

The ideal midweek reward

Emily: ‘I use this dressing to reward myself during the week. For those moments when I want to make my dinner just a little bit more delicious. The olive brine (from a jar of olives in water) is the star of the dressing, complemented by a deliciously tangy mustard and herbaceous gin. These big, bold flavors together are a dream for any salad or vegetable.

How to make Dirty Martini salad dressing

  • In a small food processor (or mortar and pestle), combine the liquid from a jar of olives, mustard and garlic.
  • Pulse briefly, then gradually add the olive oil.
  • Add the gin, rosemary, coriander and salt.
  • Keep mixing until fully combined.
  • Add salt and pepper to taste and serve over your favorite vegetables or salads.
  • You can keep the dressing for up to two weeks, but mix it well again before using.

Tip: don’t have a food processor or mortar and pestle? You can also simply chop all the ingredients very finely, put them in a jar and shake very vigorously!
