One of my uncles is featured in many of my childhood memories, turning satay skewers on one of those compact rectangular barbecues. I always made sure to stay nearby, because he would often sneak me a ‘bonus skewer’, which I would secretly devour before the rest of the family caught on…

This marinade won’t be exactly the same as the one my uncles used to make, but that doesn’t matter. Absolutely delicious, with umami from the fish sauce and heat from the sriracha hot sauce. You can cook them in a grill pan or on the BBQ. And bet you can eat all eight in no time?

How to make easy spicy chicken satay

  • Mix the sugar, vinegar, fish sauce, sambal, sriracha and ginger in a large bowl.
  • Add the chicken pieces and mix well until all the chicken is coated.
  • Thread about 4 or 5 pieces of chicken onto each skewer and place the satay skewers on a large plate.
  • (If necessary, use clean kitchen or disposable gloves, or wash your hands very thoroughly afterwards.)
  • Pour the remaining marinade into a small saucepan and bring to the boil.
  • Then reduce the heat and cook until about half remains, approximately 8 minutes.
  • Meanwhile, heat a grill pan over medium-high heat.
  • Cook the chicken for approximately 10 minutes, turning the skewers regularly and brushing the chicken with the marinade.
  • Garnish with rings of red chilli and coriander.
  • Absolutely delicious with white rice and refreshing atjar!
