Heated debates, Italians going wild! Suze’s father-in-law refuses to eat her pasta for this reason. But Julius doesn’t care: ‘Nostalgia! My mother would call me from the kitchen window while the smell of bolognese was already wafting out. I knew I had to get there as quickly as possible! Yes, I was a well-behaved child…and yes, Italian friends, I know this isn’t the original from Bologna. That contains pancetta, celery and milk, and definitely no ground meat and ketchup, I know… but I still call it bolognese because I love it, because that’s how I know it and that’s how I think of my mother. Too bad!’

How to make the bolognese sauce

  • Heat the olive oil in a heavy-bottomed pan. Sauté the onions until translucent. Add the garlic and cook for a few more minutes.
  • Add the tomato purée and cook for a few more minutes.
  • Add the ground meat and cook along for a few minutes.
  • Once the meat is cooked, add the spices, herbs, red wine, vegetable stock and canned peeled tomatoes. Stir well.
  • Simmer gently for at least 1 hour. The longer, the better! Just make sure the sauce doesn’t stick to the bottom.
  • Season with tomato ketchup, salt and pepper.

Tips: Delicious with: pasta, but definitely not spaghetti! Every type of pasta has its own sauce. Storage advice: 3 days in the refrigerator.
