Recipe for the tastiest tofu (in ginger beer!)

“The idea was to create a tofu dish with my favourite IPA beer, but it turned almost poisonous-bitter, so I abandoned that dream. The alternative version, with ginger beer, was surprisingly delicious. Very few ingredients, an insane amount of flavour. And you can simply enjoy drinking that IPA, as intended.”
How to make the tofu
- Cut the tofu into cubes. Heat 1 tablespoon of oil in a small wok. Sauté the onion with a pinch of salt. Add the ginger and garlic and fry for 1 minute.
- Spoon the black bean sauce into the pan, stir, then add the water, ginger beer and sugar as well. Let it simmer gently for a while.
- Make a slurry with the cornflour and water and add it. Let the sauce thicken. Remove from the heat and set aside until ready to use.
- Heat the remaining oil in a frying pan. Fry the tofu with a pinch of salt. Once the cubes are nicely crisp and lightly browned, add a few tablespoons of sauce. Toss well. Now add the rest of the sauce.
- Serve immediately with rice or noodles.
