Recipe: fried courgette with almonds

When served warm, these courgettes make a wonderful side dish for meat and fish. But on a summer day, you can also serve this dish very well at room temperature. Crumble some feta or soft cheese over it if you like, and you have a mezze, starter or even a lunch for 2 people.
How to make fried courgette with almonds
- Place a large frying pan over medium heat and pour in 1 tablespoon of olive oil. Add the onion to the pan, season with a pinch of salt and let the onion caramelise for 15–20 minutes. Lower the heat if it starts cooking too quickly.
- Scoop the onion out of the pan. Fry the almonds, tossing them in the remaining oil, until golden brown. Set aside.
- Add another tablespoon of olive oil to the pan and fry half of the courgette, tossing it regularly, until golden brown. Remove from the pan and fry the second batch of courgette, adding another tablespoon of oil if necessary.
- Add the first batch of courgette, the onions and the almonds, and fry everything together for another minute. Season with salt and pepper and sprinkle with dill.
