Recipe: how to make the most delicious Flügel Monchou cheesecake

Flügel? Delicious! And Monchou cheesecake? Also delicious! So why not combine the two and make a Flügel Monchou cheesecake? Exactly, let’s get to it!

Flügel is more than a sweet shot. You can use the cheerful drink in sweet recipes instead of simply drinking it. For example, pour Flügel into Viennetta, scroppinos or cupcakes. Top desserts that are easy to make and that every Flügel lover will happily devour. But also try this Monchou cheesecake with a jelly layer and Flügel topping; so delicious!
How to make the Flügel Monchou cheesecake
For the middle layer:
- Soak the gelatin sheets in cold water for at least 10 minutes
- Put the raspberries, 5 bottles of Flügel and the sugar in a saucepan and place over low heat
- Leave this until the raspberries have cooked down.
- Mash everything into a kind of jam and turn off the heat
- Place cling film on a round deep plate or in a 20 cm baking tin
- Heat the contents of 1 bottle of Flügel in the microwave
- Squeeze out the gelatin
- Dissolve the gelatin in the warm Flügel, one sheet at a time
- Add this gelatin mixture to the (slightly cooled) raspberry mixture
- Pour it onto the plate or into the tin and leave to set in the refrigerator
For the base:
- Place a saucepan with the butter on the stove and let the butter melt completely
- Crush the Liga biscuits finely
- Mix the Liga biscuits into the butter and pour this into a springform tin lined with baking paper
- Press down with a spoon and place in the refrigerator to cool
For the cheesecake:
- Whip the cream with the sugar, vanilla sugar and stabilizer until stiff
- Beat the Monchou until smooth and even
- Carefully mix the Monchou and whipped cream together
- Spoon the mixture into a (disposable) piping bag
Assembling:
- Remove the base from the refrigerator
- Pipe a layer of the Monchou/whipped cream mixture onto the base
- Place the set Flügel jelly on the first layer
- Pipe the rest of the Monchou/whipped cream mixture onto the jelly and smooth it neatly
- Place the cheesecake in the refrigerator to set
The topping:
- Put the raspberries, Flügel and sugar in a pan and slowly bring to a boil
- Let it simmer gently so that some of the raspberries break down
- Mix the cornstarch with 1 tbsp of the cooking liquid
- When the raspberries have mostly cooked down, add the mixed cornstarch.
- Cook this over low heat, stirring, for approximately 3–5 minutes, then let it cool completely.
- Remove the cheesecake from the refrigerator
- Distribute the Flügel fruit over the cheesecake and return it to the refrigerator for at least 4 more hours
