Save this recipe right away, because you’re going to want to make it very soon. There’s a good chance people will expect you to make it every time after that, because this pull-apart pizza bread is insanely delicious — it can’t be anything other than a guaranteed crowd-pleaser.

And no, it’s not a pizza toastie (also delicious); it’s so much better: a pull-apart pizza bread based on a recipe by Nadiya Hussain. She won the sixth season of The Great British Bake Off and has frequently appeared on British television as a chef ever since.

How to make pull-apart pizza bread

This recipe comes from Nadiya Hussain’s cookbook Nadiya Bakes, which was published in 2021. Definitely recommended if you enjoy baking, although I think this is by far the most delicious recipe in it.

How do you make this pull-apart bread? Just follow these 11 steps.

1. Combine the flour, baking powder, oregano, sugar, salt and yeast in a bowl (important: keep the salt and yeast separate until you start mixing) and mix until combined.
2. Make a well in the centre of the mixture and pour in the water. Mix this with a plastic or wooden spatula, or make it easy on yourself and use a food processor, until it forms one smooth mixture.
3. Sprinkle some flour on your work surface and knead the dough for ten to twelve minutes. Again, you can make this easy on yourself by using a food processor — in that case, mix for six minutes at medium speed. The dough is ready when you can stretch it well, it is smooth and glossy, and still slightly sticky.
4. Put the dough in a bowl and cover with a tea towel. Leave the dough to rise in a warm place until it has doubled in size (about 35 to 45 minutes).
5. Grease a dish (it should hold about 900 g) generously with olive oil.
6. Once the dough has finished rising, carefully place it on your work surface (make sure there is some flour on it). Roll the dough out to approximately 25 cm by 35 cm. Note: the dough may still be sticky, so use enough flour!
7. Spread the sriracha over the dough (as much as you like), distribute the slices of cheese evenly over the dough, place two slices of pepperoni on each slice of cheese, and top with the basil. Then cut the dough into eight equal squares with a sharp knife. Take each square and fold it in half. Then place them in the greased dish, with the filling facing upwards. If things went a little wrong while folding or cutting, make sure the thicker pieces go in the middle — otherwise the dough may rise too much and spill over the edge. Once the dish is full, cover it well and leave to rise for fifteen minutes.
8. Preheat the oven to 200 degrees.
9. Remove the cover from the dish and place the dish in the centre of the oven. Handy tip: put baking paper underneath it, in case the sauce or cheese drips over the edge into the oven.
10. Bake for about 25 minutes, or until golden brown. Brush some extra olive oil over the top, cover everything with aluminium foil and bake in the oven for another 20 to 25 minutes.
11. Drizzle some more olive oil over the top and let everything cool in the dish for about 20 minutes. And then: serve it maaaarrrvelously. Remove the pull-apart bread from the dish and serve it on a plate. How do you eat it? The name says it all; simply tear off a piece. It can get a little messy, so serve it with some napkins.

Oh, this is delicious. Yes, it takes a little while to make, but it isn’t difficult — so any kitchen whiz can pull it off!
