Sabrina: “These simple but delicious little köfte are based on something I ate in a restaurant in Antakya (the ancient Roman city of Antioch in southern Turkey). They’re made with dried mint – a wonderfully versatile ingredient. These köfte are deliciously straightforward. I’ve made this recipe many times since returning from that trip.”

How to make the lamb köfte with mint

  • Place all the main ingredients, except the vegetable oil, in a large bowl and mix, work and knead the mixture with your hands for a few minutes until smooth and even.
  • Shape the mixture into approximately 20 golf-ball-sized balls and flatten them.
  • Heat a large frying pan over fairly high heat. Once the pan is hot, drizzle in a little vegetable oil and fry the köfte in batches for 3 to 4 minutes per side, until cooked through and browned on both sides.
  • Thread the köfte onto wooden skewers and serve with a bowl of Greek yoghurt sprinkled with some fresh mint for dipping.

Tip: keep the first batch of köfte warm under aluminium foil while you fry the second batch, then warm them briefly in the pan again if necessary.
