Recipe: pancake cake for when you fancy a fluffy cake but not baking one

I love ‘minimum effort, maximum results’ dishes. You know the kind; dishes that look (and taste!) delicious and that you can have on the table in no time. Call me lazy, call me efficient, either way, after the success of the apple pie toastie, I have a new favorite: pancake cake.

For as little effort as possible, you can buy ready-made pancakes, which have the advantage of stacking well, but are of course crap otherwise. So come on, bake them fresh (tip: add a ripe banana to the batter!) and make them a little thicker than usual, so the whole thing doesn’t collapse or tear while stacking.
How to make a pancake cake
- Place a pancake on a nice plate.
- Use a spoon to spread a layer of fruit yogurt on top.
- Keep stacking pancakes with layers of yogurt, jam, lemon curd and fruit.
- Save some yogurt and fruit for the top.
- Generously spread yogurt over the top pancake and garnish with berries, blackberries and raspberries.
