The perfect salmon: tips for cooking without the hassle

  1. Leave the skin on. To start with: that skin is useful. You can eat the crispy skin – just like the crispy skin of chicken – but you don’t have to. That skin helps prevent your salmon from drying out quickly.
  2. Don’t cook it for too long. Don’t overdo it; salmon shouldn’t be cooked for too long. The tastiest salmon isn’t completely cooked through, but is still slightly pink inside. Are those white droplets appearing? Turn off the heat – your salmon is cooking too hard!
  3. Seasoning, seasoning, seasoning. Don’t be bland. Salmon tastes delicious, and that lovely flavor comes into its own even better when you season the fish generously with salt, pepper and possibly some paprika, or, as in this recipe: chili flakes.

How to make sticky salmon with garlic: a simple but delicious recipe

  • Make a sauce by stirring together the honey, soy sauce, lemon juice and chili flakes. Is the honey too thick? Put it in the microwave briefly; it will become much more liquid.
  • Heat two tablespoons of olive oil in a nonstick pan. Place the salmon pieces skin-side up in the hot olive oil and cook for 5 minutes, until the salmon is golden brown. The fish will now come away from the pan easily.
  • Turn the salmon over and add the final tablespoon of olive oil to the pan. Add the garlic and cook it along with the salmon.
  • Now pour the sauce over the salmon and let it cook for a few minutes, until the sauce has reduced by half. While it reduces, regularly spoon sauce over the salmon. Sprinkle some sesame seeds over the salmon, serve with green vegetables (pak choi or stir-fried spinach) and rice.
