Until the end of 2024, the unassuming star chef Arturo Dalhuisen is in the kitchen at Gossler & Florin. Here he serves a four-course lunch or a five-course dinner packed with flavor.

Arturo is no stranger to seasoned hospitality professionals. He has worked in several three-star kitchens (De Librije*** and De Leest***), and his fresh, elegant style earned The White Room* a Michelin star. He is also often invited as a guest chef. We have already dined with him at the trendy hotel chain CitizenM, at Daalder and at Bellezza

Restaurant takeover at Gossler & Florin

In principle, Arturo was only supposed to be in Amsterdam for the month of September for the restaurant takeover at Gossler & Florin (G&F). We booked right away. And what we hoped for became reality: from the first bite through to dessert, Arturo blows you away with beautiful dishes featuring elegant, fresh flavors. It characterizes his signature: this chef cooks with clarity yet plenty of expression. Everything is balanced; he never goes off the rails. That tone is set immediately with the bites, whose flavors explode in your mouth.

Five-course dinner

In addition to the three bites, Arturo’s menu consists of five courses. The first dish features king crab with tomatoes prepared in different ways. Together with the soft, fresh vinaigrette and clear tomato broth, it is a truly wonderful dish. Bursting with flavor while remaining subtle. Impressive! Also delicious is the paper-thin sliced scallop (marinated with fleur de yuzu, the Japanese citrus fruit), alternating accordion-style with slices of duck liver and crunchy daikon and apple. The latter gets its flavor from a syrup made with ginger and the Japanese seven-spice powder shichimi togarashi. Superb!

Halibut and pigeon

The halibut with eel and the barbecue-grilled pigeon dish are also in a class of their own. When Arturo later comes to our table and mainly wants to hear what we found less successful, we cannot think of anything. But when we look at the photos, we remember. It would not have been excessive to have some bread to mop up all those divine oils and creams from our plates. Like the lightly smoked lovage oil with black garlic cream and green herbs served with the pigeon…mmm.

Friendly service, lovely atmosphere

Apart from Arturo’s delicious dishes, G&F is a wonderful place with equally wonderful service. The cheerful Isabeau from Breda comes from a hospitality family and brings a great deal of Breda conviviality to Amsterdam. And that is not all: she also serves guests delicious, well-matched wines. The house champagne is Taittinger, and the other wines she pours are also top-notch—and, delightfully, not everyday choices. We drank an incredibly delicious and aromatic Silvaner from German wine producer Rudolf May in Franconia, as well as a blend of Feteasca Neagra, Cabernet Sauvignon and Merlot from Romania—the first grape being a source of national pride. For those who want one, Isabeau has put together a wine pairing for all the dishes.

Until the end of 2024

The intention was to spend only the month of September in Gossler & Florin’s kitchen, but the overwhelmingly positive reactions from guests have prompted Arturo to extend his stay. The top chef can now be found in the kitchen at Gossler & Florin through the end of December 2024. From Tuesday through Saturday, he and his team serve a five-course dinner with three bites (85 euros). On Friday and Saturday, you can also go there for a four-course lunch with three bites (62 euros). And an extra fun detail: Arturo creates a completely new menu every month. A huge challenge for him, but above all, great fun for returning guests. And there will certainly be plenty of those!

When the weather is nice, you can sit outside at the front of the restaurant, diagonally opposite the well-known Italian restaurant Toscanini on the Lindengracht.
