Michelin-starred chef Arturo Dalhuisen takes over the kitchen at Gossler & Florin for a month

Michelin-starred chef Arturo Dalhuisen is temporarily returning to a familiar spot. He previously took over the kitchen at Daalder, and now he is returning to this location. Once again for a kitchen takeover, and at the same spot on the Lindengracht in Amsterdam, which is now home to the delightful Gossler & Florin.

‘I have always found the building on the Lindengracht to be an idyllic spot. Right in the heart of Amsterdam, in the famous Jordaan district. During my first pop-up, it was Daalder; now it’s Gossler & Florin. It’s wonderful to be back here for another month,’ says Arturo.

For those who don’t know Arturo yet, here are a few highlights. He has worked in the kitchens of several Michelin-starred restaurants, including De Jonkman in Bruges (**) and as sous-chef at De Leest***. In 2016, he made a definitive name for himself as chef de cuisine at The White Room*, where his signature style of fresh notes, bright acidity and refined spices earned him a first star within two years. From 2022, he led the kitchen at Voltaire* for more than two years. Now that he is not tied to a permanent kitchen , he is finding his way back to Amsterdam for a while.

At Gossler & Florin
At the pop-up restaurant, Arturo will let guests experience how his culinary signature has developed in recent years. He cooks with clarity, yet plenty of character. He serves a paper-thin sliced scallop marinated with fleur de yuzu alongside slices of foie gras, crispy daikon and apple in a ginger-shichimi-tōgarashi syrup. The lightly pickled and roasted halibut comes with fresh cucumber and subtle spicy notes of green curry, served with stir-fried pak choi, eel and a light remoulade. My mouth is watering!

You too? Then find a gap in your schedule and be quick: Arturo’s pop-up will be at Gossler & Florin from September 3 through 30. From Tuesday through Saturday, the team serves a five-course dinner with three bites (85 euros). On Friday and Saturday, the pop-up is also open for a four-course lunch with three bites (62 euros).
