Monday – Sesame, ginger and asparagus noodle salad

This salad is fantastic for your dinner party over the weekend. Make intentionally too much and take it to the office with you on Monday. It tastes best at room temperature, which makes it the perfect leftover lunch. The freshness of the vegetables combined with the sesame-ginger dressing makes this salad the ultimate meal.

Tuesday – Kimchi fried rice

Did you start the day as if it were Thursday and only realize in the afternoon that it’s Tuesday? We know the feeling—the week can sometimes seem so long. Wednesday – Chicken tikka wraps

Yes, we’re halfway through the week! More than enough reason to celebrate at lunchtime. These wraps are made with naan, marinated tikka chicken, iceberg lettuce, mint and spring onions. Packed with freshness and thrown together in no time. Preparation takes just ten minutes. Make them in the morning before you leave or at work.

Thursday –  Vegan pulled mushroom tacos

Almost the weekend! We’re familiar with pulled pork and pulled chicken by now, but have you ever tried pulled mushroom ? Pull the mushrooms apart and marinate them. Then fry them until they have a crispy edge. Take this dish with you in three containers: mushrooms, vegetables and tacos. All you have to do is give the mushrooms a quick blast in the microwave and fill your tacos. Jealous looks from colleagues guaranteed.

Friday –  Cheesy monkey bread

This monkey bread is the ultimate lunch for getting into the weekend spirit on Friday. You make it with three different types of cheese: Parmesan, mozzarella and Monterey Jack. The latter is an American cheese and can be difficult to find in Dutch supermarkets. It’s similar to cheddar, so a good cheddar makes a perfectly fine substitute. Enjoy!
