How to make savory lentil pancakes with spinach pesto
- Note! Soak the red lentils before making this recipe. Rinse the red lentils and put them in a bowl. Add 275 ml water and soak the lentils for 3 hours for the best result.
- Put the lentils and water in a blender and add salt and pepper. Blend until smooth.
- Place the frying pan on the stove and heat the olive oil. Pour a little batter into the hot pan and spread it with a spoon into a thin pancake. Cook the pancake over medium heat with the lid on the pan. Turn it over after 2–3 minutes using a spatula.
- Cook the other side for another 2 minutes and make all the pancakes this way using the remaining batter. Stack the pancakes and, if desired, keep them warm with some aluminum foil.
- Meanwhile, make the spinach pesto. Wash the spinach and peel the garlic clove. Then put it in the food processor with the remaining ingredients and blend until smooth.
- Place the lentil pancake on a plate and spread it with the spinach pesto. Garnish with chickpeas, red onion, cucumber, chili flakes and/or plant-based yogurt. If desired, take the pancakes with you for lunch or serve immediately!
